The few ingredients in this recipe reveal its simplicity. Wash and dry 4-6 beets of the same size. Carve them as if to obtain many thin slices but without reaching all the way so that the potato remains whole, in the “hasselback”style. A trick? Place the beet between two Chinese chopsticks, this way they will stop the knife and the beet will not break. Place them on a baking sheet and season with plenty of oil and salt so that they also enter between cuts. Bake them at 190-200 C The last minutes activates the grill function. Serve with fresh herbs and a sprinkling of za’atar. They are delicious combined with fresh cheeses such as ricotta or burrata.
