The ancient Russian holiday «Maslenitsa» is approaching. We will see off winter, celebrate spring, burn a straw effigy, arrange folk festivals and competitions and, of course, eat pancakes. We are waiting for an incredible number of pancakes prepared according to a variety of recipes. Literally in every house, in every family, housewives will begin to fill up the household with delicious pancakes. For those people who do not want to take too many calories, it is recommended to try pancakes not from wheat, but from buckwheat flour. And you will observe the holiday, and you will not gain weight.
First of all, you need to take care of the presence of buckwheat flour in your kitchen. If there is none, but there is buckwheat, then you can grind it into flour using an electric mill, blender or even a coffee grinder.
Having prepared the necessary amount of buckwheat flour, and mixing it with a small amount of wheat flour, we proceed to kneading the dough for pancakes. First, in a large dish, we will mix eggs, granulated sugar, soda and salt into a single composition. This can be done manually or by using an immersion blender, which is much more convenient.
Let’s warm up a little bit to a light warmth a portion of milk and pour it into the mixture. Mix it up. Now, in small portions, we spread the sifted buckwheat flour there, stirring it at the same time, until we achieve the desired thickness of the pancake dough. You can add a little more sunflower oil.
