Ingredients for 2-4 people

4-5 white or Golden onions
200 ml water
200 ml wine vinegar
2 tablespoons brown sugar
rosemary
dried chilli
coriander in seeds
Evo oil
salt
pepper

PROCEEDING

Wash the whole onions with husk, cut the ends, and then in half. Place the half onions in the baking dish «face up». Mix water, vinegar, sugar, a crumbled chili pepper, a tablespoon of chopped rosemary and a teaspoon of ground coriander seeds. Pour the marinade into the pan until half the thickness of the onions is covered. Salt and sugar each onion abundantly then drizzle with oil and a ground pepper. Bake in the oven at 200 C During cooking, if necessary, add a little more marinating. Serve with fresh rosemary as a side dish or as a main course with a base of chickpea hummus, a drizzle of oil and toasted pine nuts.
