In a deep bowl, break the eggs, add sugar and salt, beat with a mixer. In cold water, we dissolve salt and granulated sugar. Cut the cold butter into small cubes with a knife. Then pour in the water (with salt and sugar) and mix for a couple more minutes. The dough should not be homogeneous.
We spread it on parchment paper, sprinkled with flour and roll it into a rectangle. 1/3 of the dough (from one edge) is bent to the center, we also bend the opposite side. Rolling out. Repeat the process 3-4 times.
