How to make Cucumber Rolls with hummus, cottage cheese and tomatoes
Rolls are a dish of classic Japanese cuisine. They are small rolls with a variety of fillings. Most often, fish, rice and some other ingredients act as it. Rolls have become a popular snack all over the world. Our country has not been spared the fashion for this Japanese dish either. And today we will analyze with you the recipe for how to cook rolls in the Russian manner.
To prepare vegetable rolls, we will first need cucumbers, which we will first wash in water, and then, having cut the tips, we will cut into very thin plates. This process, of course, can be carried out with an ordinary kitchen knife, but it is best to use a special vegetable cutter so that the plates are smooth and thin.
Now let’s make hummus. Boil the chickpeas and transfer it to a pulp, adding a little olive oil, lemon juice and sesame paste. If you have ready–made store-bought hummus, use it.
Now let’s prepare another component of the filling. Mash the curd cheese and mix it with small pieces of dried tomatoes. That’s it. The filling for the rolls is ready and you can collect them.
Let’s take one cucumber plate and spread cottage cheese on it. Roll it into a roll, securing it with a toothpick so that it does not unfold.
Now let’s take another plate of cucumber and this time smear it with hummus. On its edge, put the previously rolled roll, remove the toothpick and roll another already double roll. We’ll fasten the end with a toothpick again. Thus, we will make a few more roles.
We put the rolls in the refrigerator for 30-60 minutes. After we take it out, we remove the toothpicks. Sprinkle with sesame seeds and lemon zest.
We serve it to the table as a vegetarian snack.
