How to cook a Festive salad «Herring under a fur coat»
Spring has already come, which means that it’s time for everyone’s favorite Carnival. This holiday is famous for the variety of pancakes, but sometimes you get tired of them, or you just tried all possible and impossible combinations. Then, what about making a dish out of the ordinary — combining herring under a fur coat and snack pancakes? Does it sound wild? It’s just that you have no idea yet how delicious it can be.
Hard-boiled chicken eggs (keep in boiling water for about 10 minutes). Drain the hot water and pour the eggs with cold water. Leave it in the bucket for now.
The herring under our fur coat is festive, so we will need beets not only for the salad itself, but also for filling pancakes. To do this, beets are thoroughly cleaned of dirt, packed in foil and sent to the oven to bake for an hour and a half.
At this time, boil the potatoes and carrots, peel and rub in a separate bowl.
We do the same with baked beets and add mayonnaise to 1/2 of the resulting mass. This beetroot will «go» for salad.
The eggs must be cleaned and grated.
Peel the onion and finely chop it. Sprinkle it with sugar, salt and add vinegar. Pour boiling water. and leave for 10 minutes to marinate. Cut the herring into small cubes.
Pancakes must be prepared classic: mix milk, eggs and salt. Add flour, mix. It will turn out a thin dough. Fry in a hot frying pan until browned.
Squeeze the remaining grated beetroot. If desired, add sour cream or mayonnaise, mix. We cool the finished pancakes a little, put the grated beetroot on the edge of the pancake and carefully roll it into a roll. Leave the pancakes so that they are «painted» and soaked with beets, but for now we will collect the salad.
Spread the potatoes on a flat dish. We smear with a mesh of mayonnaise. A layer of carrots + mayonnaise. A layer of beetroot + mayonnaise. A layer of herring and onion + mayonnaise. Spread the grated eggs on top and spread the mayonnaise mesh again. In general, you can alternate layers as you like, I like it this way.
We leave the salad for impregnation for a couple of hours.
Stuffed pancakes are cut into rolls and spread on top of the eggs around the perimeter. Empty spaces (between rolls) are filled with leaves of greenery. It turns out that such an interesting «salad under a fur coat» with snack rolls.
