How to cook homemade berry Pastille
For a pastille, you can take absolutely any berry! A minimum of effort and the fragrant pastille will be ready!
Pour raspberries into a saucepan. Using an immersion blender, we start whipping. Of course, you can also use a pushcart. You should get a homogeneous puree.
Turn on the stove and heat our puree to 40-50 degrees. As soon as the raspberries are put on the stove, add honey. We try and adjust the sweetness. When the required temperature is reached, turn off the stove. Continue stirring until all the honey has dispersed.
The pastille can be prepared with or without bones. I’ll cook it with bones. But for those who like pitted, you need to take a second saucepan, put a sieve on it and strain the puree. Using a spoon, we wipe our raspberries with honey.
For the pastille, we take baking sheets, they will need a lot. Lubricate with oil. With a ladle, we distribute the puree evenly over the baking sheet. We put it in the drying cabinet at 60 degrees. The drying time is about 6 hours, if the pastille does not dry out, then we dry it for another hour. It all depends on the thickness of the layer.
As soon as the pastille is ready, we twist it into tubes and cut it into pieces. Our fragrant and very tasty pastille is ready! Bon Appetit!
