Always take only high-quality milk for cottage cheese — do not buy cheap packages in the hope of saving. The yield of cottage cheese will be small, and the quality is questionable. The ideal option is to go to the village for fresh, but it’s expensive. Therefore, take the same milk that you consume daily and its taste suits you.
We bring a pan of milk to a boil, but do not let it boil! As soon as the first signs appear (foam, bubbles, smoke), then add kefir and mix everything thoroughly. At this time, a curd grain should form — the first whey is separated, and the milk sets in clots.
Turn off the heating and leave the cheese billet until it cools down to room temperature. As a result, a dense layer of cottage cheese should form on the surface of the whey.
We put gauze in a colander, folded in 2-3 layers. We shift the curd mass into cheesecloth. We tie a bag with cottage cheese and hang it to separate the excess whey.
After 1.5-2 hours, we remove the bag from the suspension and put it in a sieve (or colander). We put the cargo on top (you can use a saucer and a jar of water). We put it in the refrigerator for 6-8 hours for pressing. This will give shape, remove the remnants of the serum.
