How to cook Italian cottage cheese pie with spinach and egg
Italian spinach pie is considered a traditional Easter dish in this country. Few people like spinach, but in this pie it goes perfectly with cheese and egg. This is a great dish for dinner.
Pre-take out the oil — we will need it soft. When the butter thaws, beat it with a mixer to a fluffy foam. Separate 4 egg yolks and pour into the oil. We continue to beat thoroughly. Now we send flour, baking powder and a little salt (a quarter of a spoon). Knead the dough to an elastic consistency, if it turns out to be too dry, then carefully add water — we do not need liquid. It is necessary to cover the plate with the dough with a film and send it to the refrigerator for half an hour.
We wash the spinach well, remove all the ugly and too hard parts. While the spinach dries, pour a spoonful of oil into a frying pan and send the spinach there. Fry for no more than a couple of minutes.
Rub the hard cheese with a fine grater and add to the curd (if it is not loose, then knead with a fork). Add spinach and salt and mix well.
Cut off 2/3 of the dough and put it in a baking dish. We spread the filling and make 4 indentations in it. In these pits, we break the 4 remaining eggs. Now we cover the pie with a lid from a third of the dough.
In the oven, we set 180 degrees. After 45-50 minutes, the Italian pie is ready. Let cool before serving.
