Ingredients for 4 people

2 strains of late radicchio
200 g stracciatella
2-3 slices of bread
2 tablespoons breadcrumbs
1 teaspoon cumin seeds
1 lemon
balsamic vinegar
Evo oil


Cut the bread into small cubes, about 1 centimeter on each side. In a non-stick pan, heat a little oil together with the cumin seeds, add the bread and breadcrumbs, a pinch of salt and toast, stirring often so as not to burn. Once well browned move from the heat and let cool.

Cut the late radicchio into two parts lengthwise and place in a bowl, season with oil, balsamic vinegar, salt, pepper and lemon juice, add half the toast and mix well.

Divide the stracciatella into four saucers distributing it as a base, add the seasoned late radicchio and serve with an addition of toast andtra
