Spaghetti al limone con asparagi e gamberi

The pasta dishes that we love the most are fast, fresh and rich in flavor. This seasonal recipe combines asparagus and prawns, both ingredients that Cook in no time, just a good stir-fry and you’re done. We prepared a base with garlic, oil, chilli and lemon that made us feel immediately in the summer while fresh basil gives the finishing touch for a really tasty dish!

Ingredients for 2 people

160 g spaghetti
200 G Asparagus
200 g cleaned shrimp
100 ml dry white wine
2 tablespoons lemon juice + zest
2 cloves of garlic
dried chilli
fresh basil
Evo oil


Heat 2-3 tablespoons of oil in a large skillet, add the chilli and garlic peeled and cut in half, let it taste over a gentle heat without burning. Pour in the wine and wait until it starts to simmer then add the lemon juice and zest, salt and pepper. Cook a couple of minutes in the mood that the wine alcohol evaporates and add the asparagus cut into rings of about a centimeter then cook a couple of minutes. Add the shrimp last and bring to cooking. Drain the spaghetti keeping the cooking water aside and add them to the pan stirring vigorously so that the seasoning emulsifies and becomes creamy. If necessary to increase the creaminess add a drop of cooking water and oil. Serve with fresh basil, pepper and lemon zest.
