Mimosa salad exists in a lot of variations. This is explained by the stories of appearance, when it was difficult for our hostesses to get what they needed. This recipe presents a salad with carrots and cheese.

I wash potatoes, eggs and carrots and send them to cook. Vegetables should be soft, but not falling apart, and hard-boiled eggs. Be sure to wait for cooling down before cooking — you can not make a salad from hot ingredients. |

Chop the onion as small as possible. If you don’t like the bitterness, then you can pour it with hot water for 10 minutes. Grate the potatoes with a fine grater and leave them on a plate. In another plate, three carrots, and in the third we chop the fish. We need to make the blanks before forming the dish. Grate the cheese on a fine grater. |

We take two glasses-stacks of 100 ml each and put them on a dish so that another one fits between them. Now we lay out our preparations in layers around the glasses: first potatoes, then fish, then carrots, grated egg whites, cheese. Thin strips of mayonnaise should be applied between the layers (therefore it is better to take it in a bag with a neck). |

If you want a more delicate and even taste, it is better to separate the ingredients and spread them in 2-3 thin layers. Top the salad with mayonnaise and decorate with grated yolk.
