How to cook Minced Pies

To make pies, you first need to do the dough. In a deep glass, pour yeast, sugar, a little warm water, and add enough flour to get the consistency of thick sour cream. The water must be warm, not cold, so that the yeast does not freeze over, and not hot, so that the yeast does not boil. We remove it to a warm place so that the sourdough rises. A place near the battery is ideal.
In a convenient bowl (wide and high), sift the flour. This is necessary so that the dough turns out lush, not faded, and rises easily. Beat the egg with salt, add yeast dough and mix well. Pour in warm milk and vegetable oil, mix. Gradually pour in the flour, but not all at once, since the flour is different, you can easily overdo it, and the dough can turn out heavy. The dough should stick to your hands a little. Cover the bowl with the dough with cling film, or a towel, and put it in a warm place for lifting.
Meanwhile, prepare the filling. Minced meat (pork, beef, mixed) is spread on a frying pan, after dropping vegetable oil on it. Fry for a few minutes, stirring. Cut the onion into squares, and send it to the frying pan to the minced meat and fry until ready, until golden brown. Salt, pepper, put on a plate to cool. If there is no minced meat, you can take a piece of meat, any, even chicken, grind through a meat grinder, and you will get an excellent minced meat.
When the dough increases by about half, then you can form pies. Sprinkle a little flour on the table. We separate a part of the dough with our fingers, form a sausage, tear off circles from it, put it on the table, press it down to make flat cakes, like on dumplings or manti. You can roll out a little with a rolling pin. But do not make the cakes too thin. We put the filling in the middle of the tortilla, lift the edges and make an elongated pie. We fasten the middle well.
We spread the pies on a baking sheet covered with parchment, let them stand for at least 10 minutes. Beat the egg yolk with a whisk and lubricate the pies before sending them to the oven.
Bake the pies in a preheated 180 degree oven for about 20-25 minutes until golden brown. The time may vary depending on the oven. Pies can be served both hot and cold. They are very tasty and fragrant in any form! Bon Appetit!
