We associate eating these types of dishes with holidays so it never occurs to us that we could also prepare them at home. Big mistake! Prepare a soup of mussels and / or clams is very easy, a convivial dish perfect even for many guests. This thai version is a blast, you realize how few ingredients combined together can explode in your mouth and make you fly to the other side of the world. Coconut milk, lime, ginger and a good dose of spicy will be the magic of this recipe!

Ingredients for 2 people

1.5 kg clean mussels and clams
400 g coconut milk (cooking, not the sweet vegetable drink)
1 teaspoon chopped garlic
1 fresh chilli, more for serving
2-3 cm ginger
2 tsp fresh coriander, more for serving
2 tablespoons fish sauce, optional
1 lime, more for serving
Evo oil
salt

PROCEEDING

In a bowl grate garlic, hot pepper to taste, ginger, chopped cilantro and the zest of half a lime. Pour in the coconut milk, the juice of a lime, the fish sauce and add salt then mix well and let it taste. 
Add clean clams and mussels to a large skillet with plenty of oil over medium-high heat, pour in coconut milk and cover with a lid. Shake the Pan a couple of times and leave on the stove until all the shells are open and the coconut sauce hot, about 4-5 minutes. Divide mussels and clams into plates and add the Thai coconut sauce being careful that the shells opening may leave a little sand in the dressing. Serve with fresh cilantro, chilli rings and lime.
