How to cook Olivier with chicken
What could be a more unshakable classic than an olivier salad?! A little digression into history… The author of the immortal masterpiece is the chef, manager of the Moscow Hermitage restaurant Lucien Olivier. The original recipe of the famous salad is still being debated. According to one version, it included grouse fillets, boiled potatoes, gherkins, boiled egg, mysterious soy kabul, lemon juice and mayonnaise.
Already in the USSR, olivier was renamed Stolichny salad, and poultry meat was replaced with doctor’s sausage, boiled carrots and canned green peas were added to boiled potatoes, instead of gherkins — ordinary pickles.
Step-by-step recipe

So, let’s start cooking. The chicken breast should be washed and boiled until tender in salted water, and then cooled and cut into small cubes. |

Potatoes are cleaned, cut into the same cubes, washed and then boiled until cooked. Yes, in that order. So the potato cubes will retain their shape and will not break apart when stirring. After cooling, add the potatoes to the chicken. |

We do the same with carrots. We clean and cut into cubes of the same size, and then boil until ready, drain the water, let it cool and add to the chicken and potatoes. |

Onions are cut into cubes and sent to a salad. |

We cut the pickled cucumbers into cubes and add them to the same place. |

Add green canned peas, after draining the excess liquid. |

Hard-boiled chicken eggs cut into cubes and add to the salad. Fill it with mayonnaise and mix thoroughly. |
