    Onion soup is known to many as one of the traditional French dishes. This recipe has a long history. At the moment, French onion soup is served in restaurants around the world. But it is quite simple to make it at home, and for this it is absolutely not necessary to have culinary skills at the level of the chefs of «meshlenovky» restaurants.

    The most important stage of soup preparation is properly processed onions. Onions are carefully exfoliated, cut (rings or not — it does not matter) and sent to a frying pan with preheated vegetable oil. Keep on medium heat until light golden brown. Add Italian herbs for flavor.


    Carefully pour the white wine into the onion and thoroughly evaporate to half (about 5-6 minutes), stirring occasionally.


    In a saucepan, heat the broth (I chose chicken). We send the finished onion roast and 2 tablespoons of cream cheese into it and bring the soup to a boil over high heat (about 10 minutes).


    While the soup is cooking, let’s do the croutons. It is better to preheat the oven to 190-200 degrees in advance. The baguette is thinly sliced and laid out on a baking sheet. Sprinkle them with olive oil on top. We put the croutons in the oven and dry them. Keep an eye on the color of the bread, because the cooking time can be quite different.

    The finished soup is allowed to cool down a little and with the help of a blender we achieve a homogeneous puree. We pay special attention to serving: pour warm onion soup into a plate, spread a toast on top, sprinkle with a layer of grated cheese and send it to the microwave for 1-2 minutes.
