How to make Pancakes stuffed with spinach and cheese
What kind of fillings for pancakes do not exist. There are a great many of them! Every housewife has her own, special, favorite recipe. Every time before all the holidays we flip through the cookery books in search of new recipes, and before Shrovetide — pancake recipes. But you can cook something delicious and unusual from very simple products.
Beat eggs with milk well with a blender or whisk, then add sugar, salt and soda. Beat again until smooth. Sift the flour and add it to the dough in small portions, mixing well each time so that lumps do not form. Then pour the vegetable oil into the finished dough. Mix it up.
Heat the frying pan. Before the first pancake, you can lightly lubricate it with vegetable oil. Do not lubricate all subsequent ones.
Bake pancakes until golden brown. After removing them from the pan, lubricate them with butter and stack them so that the butter melts and spreads over the entire surface on both sides.
Sort the spinach leaves, rinse and finely chop.
Grind cottage cheese with a fork and mix with spinach. If desired, you can add finely chopped basil.
Put a little filling on the pancake and roll it up. Repeat the procedure with the remaining pancakes.
