This panzanella recipe with roasted tomatoes is the classic «One pot recipe». What does it mean? That you put everything in the pan, give a good stir and while it is in the oven you must absolutely forget about it. Try it!
Ingredients for 2 people
500 g whole cherry tomatoes
1 red onion
200 g bread
burrata for serving
2-3 tablespoons Taggiasca olives
apple cider vinegar
Put the whole cherry tomatoes, the red onion cut into wedges and the bread into pieces in a baking dish. Season with thyme, oil, salt, pepper. Bake in the oven at 180 C Remove from the oven, add Taggiasca olives to taste and wet with a drop of vinegar. Serve with burrata and a sprinkling of pepper.
