Spring means new ingredients, fresh, vegetable flavors. Spring means new recipes. This cream of fresh peas (which you can also prepare with frozen ones in other seasons) is a bomb! Very fast, tasty and aromatic, it is perfect to serve as an aperitif or as a main course. It is good both warm and cold and you can serve it with the cheese you prefer, we have tried both with mozzarella and feta.
Ingredients for 2 people
400 g fresh clean or frozen peas
2 cloves of garlic
2 tablespoons of rice vinegar
fresh mint
Evo oil
salt
pepper

60 g mozzarella
3-4 asparagus tips
a few fresh beans
a few fresh peas
fresh mint
PROCEEDING
Peel the peas. In a pan brown 2 tablespoons of oil with dressed and crushed garlic, add the peas and let it taste for a couple of minutes, add half a glass of water and cook another two minutes.
Pour the peas into the blender, if you also want a small piece of garlic, add fresh mint, salt, pepper and rice vinegar. You can alternatively use wine vinegar or apples. Blend until you get a smooth cream, if necessary add a drop of water to get the consistency of your choice.
Pour into a plate and serve with mozzarella, some fresh raw peas kept aside, we also added some raw broad beans and asparagus tip that we had at home. Finally a few leaves of mint, extra virgin olive oil and pepper. You can store pea cream in the refrigerator for 3-4 days, it is also delicious cold and as an alternative to mozzarella you can also use feta cheese.
