Stuffed peppers are popular on the menu with many housewives. This dish will decorate a festive table or a family dinner. It is no less delicious with shrimp.
How to cook Pepper stuffed with quinoa, shrimp and vegetables
Pepper can be cooked not only with minced meat. Shrimp in combination with quinoa groats, as well as corn, string beans complement each other very harmoniously. In this recipe, quinoa groats are used instead of traditional rice. This is a grain crop that surpasses all other cereals in protein content. In some varieties — more than 20%, in addition, their composition is close to milk proteins. It also does not contain gluten.
Boil the quinoa.
Boil the shrimp for 5 minutes. Clean them up.
Cut the peppers in half, free from seeds. Tails can be left.
Peel onion and garlic, chop finely. Fry the onion in oil.
Add the beans to the onion. I also added some finely chopped pepper. It needs to be cut smaller. If you take frozen beans, defrost them before cooking. Add garlic at the very end and cook with it for another 30 seconds.
We put in the same shrimp, which we have already boiled, peeled, quinoa, canned corn. Add seasonings and mix everything well. The filling for the peppers is ready.
Fill the peppers with stuffing, put them in a mold, bake. The temperature is 200 ° C, the time is about 30 minutes.
Decorate with parsley and serve.
