Pisto Manchego is traditionally served with egg on top, boiled or fried, parsley and bread as an independent dish, and as a side dish.
Step-by-step recipe

Prepare the vegetables — rinse and dry. Cut the onion into cubes, chop the garlic, cut the bell pepper into cubes, zucchini and tomatoes into cubes. I have cubes with a side of 0.5-1 cm. |

Heat 3 tablespoons of olive oil in a large frying pan. |

Add the onion and garlic and fry until the onion becomes transparent ~ 5-8 minutes. Do not cover with a lid. |

Add the chopped peppers and zucchini to the pan and cook for ~ 5 minutes. |

Reduce the heat to a minimum. Now you can add chopped tomatoes. Simmer on this heat for ~ 15-20 minutes, until the peppers and zucchini are soft. Season with salt. You can also add smoked paprika to taste. |
