The cake according to this recipe has a long preparation, but it turns out moist and slightly stratified, which is very tasty. In addition, it has an excellent flavor due to the large amount of spices.
How to cook Saffron cake with raisins
Easter without a cake is simply impossible! I offer a delicious saffron cake with raisins. The dough is prepared on a sponge.
Dilute the yeast in 0.5 tbsp. warm milk, add a spoonful of sugar, leave for 10 minutes.
Add the rest of the milk, part of the flour, about 250 g. Mix well. The sponge should not be too liquid and not too thick. The consistency of sour cream. Cover with a towel, put in a warm place for at least 1 hour.
We use only egg yolks. Combine with sugar, beat white.
We introduce half of the egg mixture into the dough, add about 250 g of flour. Cover, leave for another hour in the heat.
Now add the second half of the egg mixture, melted butter, remaining flour, spices, vanilla, salt and raisins. Knead the dough, knead carefully so that it falls behind the hands. We set it to rise for the 3rd time for another 1 hour.
We spread the dough into small molds, filling them with 2/3. We put it to bake in the oven, preheated to 165 ° C. Cakes are baked for about 50 minutes or until ready. The time depends on the size of the cake and the capabilities of your oven. Check the readiness with a wooden stick.
