How to make a Shell Cake with meringue and nuts
I think both adults and children will like this delicate pastry. Thin crispy dough and a wonderful filling of whipped protein and nuts are perfectly combined in these small cakes shaped like seashells, and therefore also named. Prepare the necessary ingredients.
We will chop and peel the nuts, I used walnuts, but they can be any — according to your taste.
Cut the butter into cubes at room temperature.
In a bowl with butter, sift the flour and grind everything into crumbs.
In a glass of water, break an egg and shake it with a fork.
In a separate cup, extinguish the soda with vinegar.
In a bowl with butter and flour, pour the mixture of water and eggs, as well as slaked soda.
Knead a soft pliable dough. Wrap the dough in plastic wrap and put it in the refrigerator for 20 minutes.
While the dough is resting in the refrigerator, we will prepare the filling. Put the room temperature proteins in a blender bowl and start whipping.
Gradually add sugar to the egg mixture and whisk until high peaks.

We take the dough out of the refrigerator and divide it into 4 parts. One part is rolled out into a thin layer.
From the dough we cut out mugs of any shape convenient for you. The size of the shell will directly depend on the size of the circle, there will be a small circle, there will be small shells.
In the middle of each mug we spread the protein mixture and nuts.
The circle with the filling is folded twice to make a shell and spread on a baking sheet covered with parchment.
