Wash the eggs, very carefully separate the whites from the yolks. Add soft butter, flour, salt to the yolks. Spinach is better to use frozen. Defrost, squeeze and grind with a blender to a mushy mass. Add the spinach mass to the flour and mix everything well. |

Beat the egg whites until thick. Start at a low speed, then you can increase it. As soon as the proteins thicken, begin to shift one tablespoon into the dough and mix gently. So lay out all the proteins. |

Prepare a baking sheet, cover with baking paper. Put our green mass on paper in the shape of a rectangle, or in other words, our spinach sponge cake. This will be the basis for the roll. Put in a preheated 180 degree oven for 7-10 minutes. Take it out, let it cool down. |
