An evergreen sauce that anyone should know how to make. Fresh and summer, it makes you immediately think about holidays every day of the year. The ingredients are few and you can customize your version by varying the doses and using the herbs you prefer. We like the herbs abundant and the sauce slightly spicy thanks to the addition of fresh chili. Use tzatziki as an aperitif sauce with a good bread to dip or as a dressing for a salad or for a sandwich.

300 g greco
2 cucumbers, about 200 g
1 clove of garlic
1 green chili pepper, optional
dill
parsley
basil
lemon juice
Evo oil
salt
PROCEEDING
Wash the cucumbers and grate them in a bowl, wring out excess water and discard.
Add the greekgurt, chopped garlic and hot pepper in quantities to taste, four tablespoons of oil, the juice of half a lemon and plenty of chopped herbs. Season with salt and add more lemon and oil to your taste. Cool the sauce in the refrigerator a couple of hours before serving. Serve the sauce with herbs, lemon zest, a drizzle of oil and of course some good bread to dip.
