How to cook Vegan cutlets from zucchini and oat flakes
Of course you will say that the cutlets should be made of meat. And I suggest you try zucchini and oatmeal cutlets. The benefits of such a dish are beyond doubt. Hercules (oat flakes), not only contains vitamins and trace elements, it saturates the body with complex carbohydrates! Who’s on a diet? This is the recipe for you! Well, Italian zucchini is just a storehouse of vitamins and minerals, and also low-calorie.
Step-by-step recipe
1. |
We start with oatmeal. Pour a glass of oatmeal into a deep bowl and add a glass of milk there. Soak and leave to rest, but in the meantime we will prepare vegetables. |
2. |
Peel the onion, cut it arbitrarily. Fry in a preheated frying pan with a small amount of vegetable oil until golden brown. |
3. |
Wash the zucchini with cool water, peel it off. Grate on a coarse grater. Wash the greens and finely chop them. |
4. |
Now we will cook minced meat. Mix all the ingredients. If the oat flakes have not absorbed all the milk, and this depends on the size of the flakes (there are No. 1, 2 or 3), then they must be squeezed out. We do the same with zucchini. If you get a watery one, then we drain all the excess water, and also squeeze it out a little. Mix the flakes, zucchini, fried onions, chopped greens, egg, lemon juice. Stir and now add salt, garlic and pepper with paprika. Leave for 15 minutes in the refrigerator. |
5. |
We take the minced meat out of the refrigerator. If it turns out to be liquid, then you can add a little flour or semolina. We form flat cutlets from minced meat, roll them in flour and fry them in a heated frying pan with oil on both sides until golden brown. Cover with a lid and simmer for another 5-10 minutes. Served with fresh salad greens, sauce and fresh crispy buns. |
