To begin with, we rub the zucchini on a fine grater. And with the help of a sieve, we squeeze out all the liquid from the zucchini. This will help us for the perfect tortillas. |

Next, we transfer the zucchini to a convenient bowl. Beat two eggs, salt to taste and mix well. Then combine the squash mixture with flour and whisk until a homogeneous consistency, so that there are no lumps. The dough should be like pancakes. |
